Ingredients

  • 2 medium zucchinis
  • 12 oz shrimp, peeled and deveined
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Sliced green onions for garnish (optional)

Instructions

  1. Spiralize 2 medium zucchinis to create zucchini noodles and set aside.
  2. In a large pan, heat 1 tablespoon of olive oil over medium-high heat.
  3. Add 12 oz of shrimp and sauté until pink, about 2-3 minutes.
  4. Remove shrimp from the pan and set aside.
  5. In the same pan, add another tablespoon of olive oil and toss in 1 red bell pepper (diced) and 3 cloves garlic (minced). Cook until the peppers soften.
  6. Add the zucchini noodles to the pan and cook for an additional 3-5 minutes until they are tender.
  7. Return the shrimp to the pan, combine everything, and season with salt, pepper, and 1 tablespoon of soy sauce.
  8. Garnish with sesame seeds and sliced green onions, if desired, before serving.
