Ingredients

  • 12 egg whites
  • 1 cup fresh spinach, chopped
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • Salt and pepper to taste
  • Optional herbs (oregano, basil)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grease a muffin tin with non-stick spray or line with muffin liners.
  3. In a mixing bowl, combine egg whites and whisk until slightly frothy.
  4. Add chopped spinach and diced peppers into the egg mixture.
  5. Season with salt, pepper, and any desired herbs. Mix well.
  6. Pour the egg and vegetable mixture into the prepared muffin tin, filling each cup about 3/4 full.
