Ingredients

  • 4 whole wheat tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 bell pepper (any color), chopped
  • 1 cup corn (fresh or frozen)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and prepare your workspace.
  2. Chop the bell peppers into small pieces.
  3. In a skillet, over medium heat, sauté the bell peppers until slightly tender.
  4. Add corn to the skillet and stir until heated through.
  5. Remove the vegetables from heat.
  6. Lay a tortilla flat and sprinkle cheese evenly over one half.
  7. Add a generous spoonful of the vegetable mixture on top of the cheese.
  8. Fold the tortilla in half to create a pocket.
  9. In the same skillet, add a little olive oil and place the folded quesadilla onto it.
  10. Cook each side for about 3-4 minutes, until golden brown and crispy.
  11. Repeat the process with remaining tortillas and filling.
  12. Allow to cool slightly, then cut into wedges and serve with toppings of choice.
