Ingredients

  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1 potato, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Fresh parsley for garnish

Instructions

  1. Rinse and drain 1 cup of lentils under cold water.
  2. In a large pot, heat 2 tablespoons olive oil over medium heat.
  3. Add 1 diced onion, 2 minced garlic cloves, and sauté until translucent.
  4. Add diced 2 carrots, 1 diced potato, and 1 chopped bell pepper; sauté for 5 minutes.
  5. Add the rinsed lentils, 4 cups vegetable broth, and 1 can diced tomatoes.
  6. Stir in 1 teaspoon cumin, 1 teaspoon paprika, and salt and pepper to taste.
  7. Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.
  8. Add 1 cup frozen peas and cook for an additional 5 minutes.
  9. Adjust seasoning if needed and serve warm, garnished with fresh parsley.
