Ingredients

  • 1 cup basmati rice
  • 1 tablespoon oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 can (400g) diced tomatoes
  • 1 can (400g) chickpeas, drained
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Begin by cooking 1 cup of basmati rice according to package instructions and set aside.
  2. In a large pan, heat 1 tablespoon of oil over medium heat.
  3. Add 1 chopped onion and sauté until golden brown.
  4. Stir in 3 minced garlic cloves and 1 tablespoon of grated ginger; sauté for another minute.
  5. Add 1 teaspoon of cumin, 1 teaspoon of turmeric, and 1 teaspoon of paprika; cook for 1-2 minutes.
