Hearty Vegan Sweet Potato & Black Bean Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 sweet potatoes, peeled and cubed
  • 1 can (400g) black beans, drained and rinsed
  • 1 can (400g) diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt, to taste
  • 2 cups vegetable broth

Instructions

  1. Heat a large pot over medium heat. Add a splash of water or vegetable broth to sauté onions and garlic until softened.
  2. Add diced sweet potatoes and cook for about 5 minutes.
  3. Stir in black beans, canned tomatoes, chili powder, cumin, and salt.
  4. Pour in vegetable broth and bring the mixture to a boil.
  5. Reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
