Ingredients

  • 1 medium eggplant
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon smoked paprika
  • 4 whole-wheat tortillas
  • ½ cup hummus
  • 2 cups fresh greens (spinach, arugula or mixed greens)

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Slice the eggplant into ½-inch thick rounds and brush both sides with olive oil.
  3. Season with salt, pepper, and smoked paprika for added flavor.
  4. Grill the eggplant slices for about 3-4 minutes on each side until tender and slightly charred.
  5. While the eggplant is grilling, prepare your whole-wheat tortillas by laying them flat.
