Ingredients

  • 1 head cauliflower, cut into florets
  • 2 medium carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 1 cup jasmine rice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Start by heating a tablespoon of oil in a large pan over medium heat.
  2. Add one chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in two minced garlic cloves and one teaspoon of grated ginger, cooking for an additional minute.
