Ingredients

  • 200g canned salmon
  • 100g breadcrumbs
  • 1 large egg
  • 50g onion, chopped
  • 30g fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 200g quinoa
  • 150g cucumber, diced
  • 100g cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine canned salmon, breadcrumbs, egg, chopped onion, parsley, and seasonings.
  3. Form the mixture into patties, about 1 cm thick.
  4. Place the patties on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, flipping halfway through until golden brown.
  6. While patties are baking, rinse the quinoa under cold water.
  7. Cook quinoa according to package directions, then let it cool.
  8. In a separate bowl, mix cooled quinoa with diced cucumber, cherry tomatoes, lemon juice, and olive oil.
  9. Season the salad with salt and pepper to taste.
  10. Serve patties warm alongside the zesty quinoa salad.
