Ingredients

  • 1 can chickpeas
  • 2 cups fresh spinach
  • 2 carrots, diced
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Begin by rinsing and draining one can of chickpeas.
  2. In a large pot, heat a tablespoon of olive oil over medium heat.
