Ingredients

  • 500 grams sweet potatoes
  • 200 grams kale, chopped
  • 1 medium onion, diced
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes into cubes.
  3. Toss the sweet potato cubes with olive oil, salt, and pepper on a baking sheet.
  4. Roast the sweet potatoes for 25-30 minutes until tender and slightly caramelized.
  5. While the sweet potatoes roast, finely chop the onion and kale.
  6. In a pan, heat some olive oil over medium heat and sauté the onions until they are translucent.
  7. Add the chopped kale to the pan with onions, and cook until wilted.
  8. Once the sweet potatoes are done, combine them with the sautéed kale and onions in a large mixing bowl.
