Ingredients

  • 4 large tortillas
  • 200 g shredded cheese (cheddar or mozzarella)
  • 100 g bell peppers, sliced
  • 50 g onions, sliced
  • 50 g spinach or lettuce
  • 200 g guacamole
  • 100 g salsa

Instructions

  1. Heat a non-stick skillet over medium heat.
  2. Place a tortilla in the skillet and sprinkle cheese on one half.
  3. Layer sautéed vegetables on top of the cheese.
  4. Fold the tortilla in half and press down gently with a spatula.
  5. Cook until the tortilla is golden brown and the cheese has melted (about 3-4 minutes). Flip and repeat.
  6. Remove from heat and cut into wedges.
  7. Serve with salsa and guacamole on the side.
