Cheesy Chicken & Spinach Pizza Pockets

Ingredients

  • 300g diced chicken
  • 100g fresh spinach
  • 150g shredded mozzarella cheese
  • 500g pizza dough
  • Olive oil for brushing
  • Salt and pepper to taste

Instructions

  1. Begin by preparing the pizza dough according to your preferred recipe or use store-bought dough for convenience.
  2. Preheat your oven to 200°C (400°F).
  3. In a skillet, cook 300g of diced chicken until no longer pink, approximately 5-7 minutes.
  4. Add 100g of fresh spinach to the skillet and sauté until wilted, about 2 minutes.
  5. Remove from heat and mix in 150g of shredded mozzarella cheese until melted.
  6. Roll out the pizza dough on a floured surface to about 1/4 inch thick.
  7. Cut the dough into circles using a bowl or cookie cutter.
  8. Place a spoonful of the chicken-spinach mixture in the center of each circle.
  9. Fold the dough over to create a pocket and pinch the edges to seal.
  10. Arrange the pockets on a baking sheet lined with parchment paper.
  11. Brush the tops with olive oil and sprinkle with additional mozzarella if desired.
  12. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  13. Remove from oven and let cool for a few minutes before serving.
