Ingredients

  • 2 medium zucchinis
  • 1 cup corn (fresh or canned)
  • 1 cup grated cheese (cheddar or mozzarella)
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons oil (for frying)

Instructions

  1. Begin by grating the zucchini and place it in a colander. Sprinkle with a pinch of salt, let it sit for 10 minutes, then squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, corn, grated cheese, flour, eggs, salt, and pepper, mixing until fully incorporated.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of oil.
  4. Scoop small portions of the batter into the skillet, flattening them slightly, and cook for about 3-4 minutes or until golden brown.
  5. Flip the pancakes carefully and cook for another 3-4 minutes until both sides are golden and crispy.
