Ingredients

  • 1 cup raw cashews
  • 1 cup water
  • 1 can (400g) crushed tomatoes
  • 2 cloves garlic
  • 250g gluten-free pasta
  • 1 tablespoon olive oil
  • Salt to taste
  • Cherry tomatoes for garnish
  • Fresh herbs (basil or mint)

Instructions

  1. Soak 1 cup of raw cashews in water for 4 hours, then drain.
  2. In a blender, combine soaked cashews, 1 cup of water, 1 can (400g) crushed tomatoes, 2 cloves of garlic, and salt to taste. Blend until smooth.
  3. Cook 250g of gluten-free pasta according to package instructions, then drain and set aside.
