Ingredients

  • 2 medium sweet potatoes
  • 1 can black beans (400g)
  • 8 soft tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup diced tomatoes
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes into small cubes.
  3. Toss the sweet potato cubes in a tablespoon of olive oil, salt, and pepper, then spread on a baking sheet.
  4. Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  5. While the sweet potatoes are roasting, rinse and drain the black beans.
