Fluffy Cauliflower & Spinach Egg Bake for Meal Prep

Ingredients

  • 6 large eggs
  • 200 grams spinach
  • 150 grams cauliflower florets
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together 6 large eggs with a pinch of salt and pepper.
  3. Add 200 grams of finely chopped spinach and 150 grams of cauliflower florets into the egg mixture.
  4. Grease a baking dish with olive oil.
  5. Pour the egg and vegetable mixture into the baking dish.
  6. Use the back of a spoon to create small wells in the mixture and crack an egg into each well.
  7. Sprinkle any remaining cauliflower florets on top.
  8. Bake in the preheated oven for 25-30 minutes, until the eggs are set.
  9. Remove from the oven and allow to cool for a few minutes before slicing.
