Ingredients

  • 1 cup chickpeas
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil
  • 2 cups fresh spinach
  • 2 cups whole wheat flour
  • Water, as needed

Instructions

  1. In a mixing bowl, combine 1 cup of chickpeas, 1 teaspoon of cumin, 1 teaspoon of paprika, salt, and pepper to taste. Mix well.
  2. Heat 1 tablespoon of olive oil in a pan over medium heat and add the spice mixture. Stir for 2-3 minutes until fragrant.
  3. Add 2 cups of fresh spinach to the pan and sauté until wilted. Remove from heat.
  4. In a separate bowl, mix 2 cups of whole wheat flour with a pinch of salt. Gradually add water until a soft dough forms.
  5. Divide the dough into small balls and roll each out into a flatbread shape.
  6. Cook the flatbreads in a dry skillet over medium-high heat for 2-3 minutes on each side until lightly golden.
  7. Spread the chickpea-spinach mixture on half of each flatbread, fold over, and lightly toast again for another minute.
  8. Serve warm with a dip of your choice, such as tahini or yogurt.
