Ingredients

  • 1 cup whole wheat flour
  • ½ teaspoon baking powder
  • Pinch of salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 cup mixed bell peppers (finely chopped)
  • ½ cup shredded mozzarella cheese
  • Marinara sauce (for topping)

Instructions

  1. Preheat your oven to 190°C (375°F) and lightly grease a muffin tin.
  2. In a large bowl, combine 1 cup whole wheat flour, ½ teaspoon baking powder, and a pinch of salt.
  3. In another bowl, whisk together 1 cup of milk, 1 large egg, and 2 tablespoons of olive oil.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in 1 cup of finely chopped mixed bell peppers and ½ cup of shredded mozzarella cheese.
