Ingredients

  • 200g barley
  • 1 medium zucchini
  • 1 bell pepper
  • 150g cherry tomatoes
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Cook the barley according to package instructions, then set aside to cool.
  2. Slice the zucchini, and peppers into rounds or strips.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Toss the sliced veggies in olive oil, salt, and pepper.
  5. Grill the zucchini and peppers until they have grill marks and are tender, about 3-4 minutes per side.
  6. In a large bowl, mix the cooked barley with grilled veggies and cherry tomatoes.
  7. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to create the dressing.
