Ingredients

  • 200g firm tofu
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste
  • 4 large lettuce leaves
  • 100g bell peppers, sliced
  • 100g carrots, julienned
  • 100g purple cabbage, shredded
  • 2 tablespoons miso paste
  • 2 tablespoons water
  • 1 teaspoon vinegar

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Press the tofu to remove excess moisture, then cut it into cubes.
  3. Toss the tofu cubes with olive oil, salt, and pepper. Bake in the oven for 25-30 minutes until golden and crispy.
  4. While the tofu bakes, prepare the vegetables by slicing bell peppers, julienning carrots, and shredding the purple cabbage.
  5. In a bowl, whisk together miso paste, water, and a touch of vinegar to create the miso dressing.
  6. Once the tofu is done, assemble the wraps by laying a few leaves of lettuce flat and adding baked tofu and assorted vegetables.
