Ingredients

  • 2 medium beets
  • 1 cup quinoa
  • 2 cups water
  • 2 oranges
  • 2 cups fresh spinach
  • 1/4 cup sunflower seeds
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Wrap the beets in aluminum foil and roast them in the oven for about 45-60 minutes until tender.
  3. While the beets are roasting, rinse the quinoa under cold water and cook it in a pot with double the amount of water. Bring to a boil, then reduce to a simmer and cover until fluffy, about 15 minutes.
  4. Once the beets are cool, peel and slice them into rounds.
  5. Prepare the citrus by peeling and slicing the oranges into rounds.
  6. In a large bowl, combine the quinoa, roasted beets, and citrus slices. Toss gently to combine.
  7. On a serving platter, arrange the spinach leaves, then top with the quinoa mixture.
  8. Sprinkle sunflower seeds on top for added crunch and nutrition.
