Zesty Lentil-Stuffed Bell Peppers Recipe

Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 1 cup dried lentils (green or brown)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Cook the lentils according to package instructions until tender, approximately 20-25 minutes.
  3. While the lentils are cooking, prepare the bell peppers by cutting them in half and removing the seeds.
  4. In a skillet, sauté onions and garlic until fragrant, about 3-4 minutes.
  5. Add cooked lentils, chopped herbs, lemon juice, salt, and pepper to the skillet, mixing well.
  6. Stuff each bell pepper half with the lentil mixture, pressing down to pack it in.
  7. Place the stuffed peppers in a baking dish and sprinkle feta cheese on top.
  8. Bake in preheated oven for 25-30 minutes, until peppers are tender.
  9. Remove from oven, let cool slightly, and serve warm.
