Ingredients

  • 250 grams whole wheat pasta
  • 200 grams broccoli florets
  • 50 grams pine nuts
  • 2 cloves garlic
  • 60 ml olive oil
  • 150 grams cherry tomatoes
  • Fresh basil leaves

Instructions

  1. Cook 250 grams of whole wheat pasta according to package instructions. Drain and set aside.
  2. In a blender, combine 200 grams of broccoli florets, 50 grams of pine nuts, 2 cloves of garlic, and 60 ml of olive oil. Blend until smooth.
  3. Mix the broccoli pesto with the cooked pasta until evenly coated.
  4. Add 150 grams of halved cherry tomatoes and mix gently to combine.
  5. Divide the pasta into meal prep containers, topping each with fresh basil leaves.
  6. Store in the refrigerator for up to 4 days and enjoy cold or reheated.
