Ingredients

  • 1 medium eggplant
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 pita breads
  • 1/4 cup tahini
  • 1/4 cup plain yogurt
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions
