Ingredients

  • 2 cod fillets (150g each)
  • 1 lemon, sliced
  • Fresh basil leaves (20g)
  • 100g barley
  • 150g fresh spinach or greens
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place the cod fillets in a baking dish and season with salt and pepper.
  3. Squeeze fresh lemon juice over the fillets and top with lemon slices.
  4. Add chopped basil leaves on top of the cod.
  5. Cover the dish with aluminum foil and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. While the cod is baking, cook barley according to package instructions.
  7. In a separate pan, wilt fresh spinach and other greens over medium heat until tender.
  8. Once the cod and barley are cooked, serve the cod over the barley and top with wilted greens.
