Ingredients

  • 200g tempeh
  • 1 cup brown rice
  • 200g edamame (shelled or pod)
  • 1 tablespoon oil
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon garlic powder
  • Chopped green onions (for garnish)

Instructions

  1. Begin by cooking 1 cup of brown rice according to package instructions.
  2. While the rice is cooking, slice 200g of tempeh into thick strips.
  3. In a skillet over medium heat, add a tablespoon of oil and heat until shimmering.
  4. Place the tempeh strips in the skillet and cook until golden brown, about 4-5 minutes on each side.
  5. In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of maple syrup, and a teaspoon of garlic powder to create the glaze.
  6. Pour the glaze over the tempeh in the skillet and cook for an additional 2-3 minutes until the tempeh is fully coated and caramelized.
  7. In another pot, steam 200g of edamame for about 5-7 minutes until tender.
  8. Once everything is cooked, assemble the bowls by placing a serving of brown rice, topped with glazed tempeh, and steamed edamame.
  9. Garnish with chopped green onions if desired, and serve warm.
