Buffalo Cauliflower & White Bean Wraps: A Protein-Packed Vegan Delight

Ingredients

  • 1 small head of cauliflower (about 400 grams)
  • 2 tablespoons olive oil
  • 1/4 cup buffalo sauce
  • Salt and pepper to taste
  • 1 can (400 grams) white beans
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 4 whole wheat tortillas
  • Lettuce leaves
  • Chopped green onions

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut cauliflower into small florets and place them in a bowl.
  3. Toss the florets with olive oil, buffalo sauce, salt, and pepper until well coated.
  4. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and crispy.
  5. While the cauliflower is roasting, drain and rinse the white beans. In a blender, combine white beans, garlic, lemon juice, and a little salt. Blend until smooth and creamy.
  6. Once the cauliflower is done, assemble the wraps by spreading the white bean mixture on the tortillas.
  7. Add a layer of lettuce, roasted cauliflower, and chopped green onions.
