Hearty Potato, Veggie & Bean Bake

Ingredients

  • 500 grams potatoes
  • 200 grams mixed vegetables (peas, corn, carrots)
  • 400 grams canned white beans, drained
  • 200 grams cheese (grated)
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Slice the potatoes into rounds approximately 1 cm thick.
  3. Boil the potato slices for about 5 minutes until slightly softened, then drain.
  4. In a baking dish, layer the boiled potato slices at the bottom.
  5. Arrange a mix of peas, corn, and diced carrots over the potatoes.
  6. Add a layer of white beans across the vegetables.
  7. Repeat the layers until all ingredients are used, finishing with potato slices on top.
  8. Sprinkle cheese over the final layer of potatoes.
  9. Cover the dish with foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  11. Let cool for a few minutes before serving.
