Ingredients

  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup green cabbage, chopped
  • 2 tomatoes, chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Begin by rinsing 1 cup of lentils under cold water and set aside.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  3. Add 1 chopped onion and sauté until translucent, about 5 minutes.
  4. Add 2 diced carrots and cook for another 5 minutes.
  5. Stir in 1 cup of chopped green cabbage and cook for an additional 3 minutes.
  6. Add 2 chopped tomatoes, 4 cups of vegetable broth, and the rinsed lentils to the pot.
  7. Season with salt, pepper, and your favorite spices. Bring the mixture to a boil.
  8. Reduce heat to low and simmer uncovered for about 25-30 minutes, until lentils are tender.
