Ingredients

  • 1 cup brown rice
  • 2 tablespoons olive oil
  • 1 cup grated carrots
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1 cup green peas
  • Fresh cilantro for garnish

  1. Begin by rinsing 1 cup of brown rice under cold water until the water runs clear.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat.
