Ingredients

  • 2 medium sweet potatoes, diced
  • 2 cups fresh spinach
  • 4 large tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream and salsa

Instructions

  1. Preheat a skillet over medium heat.
  2. Peel and dice the sweet potatoes into small cubes.
  3. Add the sweet potatoes to the skillet and sauté until tender.
  4. Add fresh spinach to the skillet and cook until wilted.
  5. Remove the mixture from the skillet and set aside.
  6. Place a tortilla in the skillet, and sprinkle cheese evenly over half of it.
