Ingredients

  • 300g cauliflower rice
  • 2 large eggs
  • 100g kimchi
  • 2 tablespoons sesame oil
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Start by preparing the cauliflower rice. If using whole cauliflower, chop it into florets and pulse in a food processor until it resembles rice grains.
  2. In a large skillet, heat a tablespoon of oil over medium heat. Add the cauliflower rice and sauté until tender, about 5 minutes.
  3. Make a well in the center of the skillet, add another tablespoon of oil, and crack the eggs into the well. Scramble the eggs until fully cooked, then mix them with the cauliflower rice.
  4. Stir in the kimchi and cook for another 2-3 minutes, allowing the flavors to meld.
