Ingredients

  • 500g broccoli florets
  • 400g canned chickpeas
  • 150g feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon (for juice)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Wash and chop the broccoli into bite-sized florets.
  3. Rinse and drain the canned chickpeas.
  4. In a large mixing bowl, combine the broccoli and chickpeas.
  5. Drizzle with olive oil, season with salt and pepper, and toss well to coat.
  6. Spread the mixture evenly on a baking sheet.
  7. Roast in the oven for 20-25 minutes, or until the broccoli is tender and slightly browned.
