Ingredients

  • 200g brown rice
  • 400g canned black beans, drained
  • 1 tablespoon taco seasoning
  • 150g sweet corn
  • 1 avocado, sliced
  • 1 red bell pepper, diced
  • 100g shredded cheese (optional)
  • 150g yogurt or sour cream (optional)

Instructions

  1. Cook the brown rice according to package instructions and set aside.
  2. In a pan, add the black beans and stir in taco seasoning, cooking over medium heat for 5 minutes.
