Ingredients

  • 200g quinoa
  • 5 sheets of nori
  • 1 cucumber
  • 1 carrot
  • 1 avocado
  • 2 tablespoons sesame seeds
  • 2 tablespoons vegan mayo

Instructions

  1. Cook 200g quinoa according to package instructions and let it cool.
  2. Prepare your vegetables by thinly slicing 1 cucumber, 1 carrot, and 1 avocado.
  3. Place a sheet of nori on a bamboo sushi mat, shiny side down.
  4. Spread a layer of quinoa over the nori, leaving a 1-inch border at the top.
  5. Arrange the sliced vegetables in a line across the quinoa.
  6. Drizzle a small amount of vegan mayo in the center of the veggies.
  7. Carefully roll the sushi tightly away from you, using the mat to help you.
  8. Seal the edge of the nori with a little water.
  9. Slice the roll into 6-8 pieces using a sharp knife.
