Ingredients

  • 2 medium eggplants
  • 400g ricotta cheese
  • 200g fresh spinach (cooked and chopped)
  • 400ml marinara sauce
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplant into thin, long strips and sprinkle with salt. Set aside for 15 minutes to draw out excess moisture.
  3. Rinse the eggplant strips and pat dry with a paper towel.
  4. In a bowl, mix ricotta cheese, cooked spinach, salt, and pepper until well combined.
  5. Lay an eggplant strip flat, fill with the ricotta mixture, and roll tightly.
  6. Place the roll-up seam-side down in a baking dish covered with marinara sauce.
  7. Repeat until all eggplant slices are used. Top with additional marinara and sprinkle with cheese if desired.
  8. Bake in preheated oven for 25-30 minutes, or until heated through and slightly golden.
