Whole30 Lemon Herb Salmon Bake

Ingredients

  • 4 salmon fillets (150g each)
  • 1 lemon
  • 1 bunch fresh parsley
  • 1 bunch fresh dill
  • 200g carrots
  • 200g zucchini
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Prepare a baking dish and lightly grease it with olive oil.
  3. Place salmon fillets in the baking dish, skin-side down.
  4. Slice the lemon into thin rounds and arrange them on top of the salmon.
  5. Chop fresh herbs, such as parsley and dill, and sprinkle them over the salmon.
  6. Prepare carrots and zucchini, slicing the zucchini into rounds and leaving the carrots whole or halved.
  7. Arrange the vegetables around the salmon in the baking dish.
  8. Drizzle everything with olive oil and season with salt and pepper to taste.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
