Ingredients

  • 2 medium cucumbers
  • 2 medium carrots
  • 200g firm tofu
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or agave syrup
  • Sesame seeds for garnish
  • Olive oil for baking

Instructions

  1. Spiralize the cucumbers using a spiralizer to create noodle-like strands.
  2. Thinly slice the carrots into matchsticks or use a spiralizer for noodles.
  3. Preheat the oven to 200°C (400°F) and cube the tofu.
  4. Toss the tofu in a tablespoon of oil, salt, and pepper.
  5. Spread the tofu on a baking sheet and bake for 25-30 minutes until golden and crispy.
