Ingredients

  • 2 duck breasts
  • 200g wild rice
  • 200g mushrooms (cremini or button)
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season the duck breast with salt and pepper on both sides.
  3. Heat a skillet over medium-high heat and place the duck breast skin-side down, cooking for about 6-8 minutes until the skin is crispy.
  4. Flip the duck and sear the other side for an additional 4-5 minutes.
  5. Transfer the skillet to the preheated oven and roast for 10-15 minutes for medium-rare doneness.
  6. Remove the duck from the oven and let it rest for 5 minutes before slicing.
  7. Meanwhile, cook wild rice according to package instructions.
  8. In the same skillet used for the duck, add mushrooms and sauté for 4-5 minutes until browned.
  9. Assemble the bowl by placing wild rice at the base, followed by sliced duck breast and sautéed mushrooms.
