Ingredients

  • 500g ground elk meat
  • 100g breadcrumbs
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • Herbs and spices to taste (e.g., salt, pepper, oregano)
  • 200g lentils
  • 1 bell pepper, sliced (any color)
  • Water for cooking lentils

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground elk meat with breadcrumbs, minced garlic, chopped onion, and your choice of herbs and spices.
  3. Form the mixture into small meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20-25 minutes, or until cooked through.
  6. While the meatballs are baking, rinse lentils under cold water.
  7. In a pot, combine lentils with fresh water, bring to a boil, then reduce to simmer until tender (about 20-25 minutes).
  8. In the last 10 minutes of cooking the lentils, add sliced bell peppers to the pot to soften.
  9. Once the meatballs and lentils are done, serve the meatballs over a bed of lentils with roasted peppers on the side.
  10. Garnish if desired and enjoy!
