Ingredients

  • 2 cups uncooked rice
  • 2 tablespoons cooking oil
  • 1 can (about 340g) Spam, diced
  • 1 cup frozen mixed vegetables
  • 2 large eggs
  • Soy sauce, to taste
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  1. Begin by cooking 2 cups of rice according to package instructions. Set aside once cooked.
  2. In a large skillet, heat 2 tablespoons of oil over medium-high heat.
  3. Add 1 can (about 340g) of diced Spam to the skillet. Cook until slightly crispy, about 4-5 minutes.
  4. Stir in 1 cup of frozen mixed vegetables and cook until heated through, around 3-4 minutes.
  5. Push the Spam and vegetables to one side of the skillet. Crack 2 eggs on the empty side and scramble until fully cooked.
  6. Add the cooked rice to the skillet and mix everything together.
  7. Season with soy sauce, salt, and pepper to taste. Stir well to combine.
  8. Top with chopped green onions before serving.
