Ingredients

  • 1 cup (150g) couscous
  • 2 cups (300g) frozen mixed vegetables
  • 1 cup (240ml) water
  • 1 tablespoon (15ml) olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (like parsley), for garnish

Instructions

  1. Boil 1 cup (240ml) of water in a saucepan.
  2. Add 1 cup (150g) of couscous to the boiling water, remove from heat, and cover for 5 minutes.
  3. In a separate bowl, combine 2 cups (300g) of frozen mixed vegetables and microwave for 3-5 minutes until heated through.
  4. Fluff the couscous with a fork and gently mix in the microwaved vegetables.
  5. Drizzle with 1 tablespoon (15ml) of olive oil and season with salt and pepper to taste.
