Ingredients

  • 2 cans young green jackfruit in brine
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt to taste
  • 1 can black beans, drained and rinsed
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Drain and rinse the canned jackfruit. Remove any seeds and shred the jackfruit into pieces.
  2. In a large skillet, heat oil over medium heat. Add diced onions and sauté until translucent.
  3. Add the shredded jackfruit to the skillet along with smoked paprika, cumin, garlic powder, and salt. Stir well to coat the jackfruit.
