Ingredients

  • 400 grams of beef liver
  • 500 grams of sweet potatoes
  • 200 grams of onions
  • 3 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon of ghee or extra olive oil for searing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and cutting them into bite-sized cubes.
  3. Toss the sweet potato cubes and sliced onions in olive oil, salt, and pepper.
  4. Spread the sweet potatoes and onions on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes or until tender and golden, stirring halfway through.
  6. In the meantime, heat a skillet over medium-high heat and add ghee or olive oil.
