Nutritious Vegetarian Protein Tempeh Bowls

Ingredients

  • 250g tempeh
  • 150g brown rice
  • 100g broccoli
  • 150g cherry tomatoes
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tahini sauce for drizzling

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Press the tempeh to remove excess moisture and cut it into cubes.
  3. In a bowl, marinate the tempeh cubes with soy sauce, olive oil, and spices of your choice for at least 30 minutes.
  4. Chop the broccoli, cherry tomatoes, and any other vegetables you prefer.
  5. Spread the marinated tempeh and chopped vegetables on a baking tray.
  6. Roast in the oven for about 25-30 minutes, or until the tempeh is golden and the vegetables are tender.
  7. Cook brown rice according to package instructions.
