Ingredients

  • 200g shirataki noodles
  • 150g tofu, cubed
  • 100g bean sprouts
  • 2 tablespoons tamarind paste
  • 1 tablespoon soy sauce
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Chopped peanuts for garnish

Instructions

  1. Begin by draining and rinsing the shirataki noodles to remove the odor, then bring a pot of water to boil.
  2. Boil the noodles for 2-3 minutes, then drain and set aside. This helps improve their texture.
  3. Heat a non-stick skillet over medium heat and add cubed tofu. Cook until golden brown on all sides, about 5-7 minutes.
  4. Add bean sprouts to the skillet and stir-fry for an additional 2 minutes.
  5. In a small bowl, mix tamarind paste, soy sauce, and a splash of lime juice to create the sauce.
  6. Pour the tamarind sauce over the tofu and bean sprouts, then add the cooked shirataki noodles.
  7. Toss everything gently to combine and heat through for about 2-3 minutes.
  8. Serve hot, garnished with chopped cilantro, peanuts, and lime wedges.
