Spaghetti Squash Marinara Boats

Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • 1 teaspoon dried oregano
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the inside of the squash halves with olive oil and season with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes or until tender.
  5. Meanwhile, prepare the homemade marinara sauce by sautéing onions and garlic in olive oil.
  6. Add crushed tomatoes, salt, pepper, and herbs to the pan, simmer for 20 minutes.
  7. Once the squash is cooked, use a fork to shred the insides into noodles.
