Tuna Poke Bowl with Cauliflower Rice

Ingredients

  • 300g fresh tuna
  • 200g cauliflower
  • 100g edamame (shelled)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. Start by preparing the cauliflower rice: rinse a head of cauliflower, chop into florets, and pulse in a food processor until rice-sized.
  2. In a skillet over medium heat, lightly sauté the cauliflower rice for about 5 minutes, until just tender.
  3. Meanwhile, cut fresh tuna into bite-sized cubes and place in a bowl.
  4. Pour soy sauce and sesame oil over the tuna, mixing well to coat; let it marinate for about 10 minutes.
  5. In a serving container, layer the sautéed cauliflower rice at the bottom.
  6. Add edamame on one side and marinated tuna cubes on top of the cauliflower rice.
  7. Drizzle with additional soy-sesame sauce, and garnish with sesame seeds and chopped green onions.
