Ingredients

  • 2 large potatoes (about 500g)
  • 2 leeks
  • 1 tablespoon butter (15g)
  • 4 cups vegetable broth (960ml)
  • 1/2 cup heavy cream (120ml)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Start by thoroughly washing the leeks to remove any dirt and sand.
  2. Slice the leeks and dice the potatoes into uniform pieces.
  3. In a large pot, melt some butter over medium heat.
  4. Add the sliced leeks to the pot and sauté until softened, about 5 minutes.
  5. Stir in the diced potatoes and cook for another 2-3 minutes.
  6. Pour in vegetable broth until all the vegetables are covered.
  7. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes or until the potatoes are tender.
  8. Using an immersion blender, puree the soup until smooth, adding cream to reach the desired creaminess.
